Cocktail Party

I am always looking for ways to skimp and be frantastically fabulous at the same time. Sara La Fountain has the perfect recipe for that  impress for less occasion. The cocktails and eats look pretty tasty especially the Pomegrante Matrini. While I’m sure you have made many, I am still making baby steps in the area mixology.

 Start off with drinks:

Pomegranate Martini

1 1/2 cups pomegranate juice
1 1/2 cups vodka
1 1/2 cups simple syrup (1 cup sugar and 1 cup water, boiled and cooled)
1 cup plus 3 Tbsp lemon juice
1 1/2 cups ice

Chill martini glasses in the freezer. Mix all ingredients in a shaker or drink bottle (glass bottle with a cap). Shake well, then pour into chilled glasses.

Per Serving (5.5 oz): 268 cal, 0 g fat (0 g sat), 40 g carbs, 8 mg sodium, 0 g fiber, 0 g protein
Cost: $12.80

Then eats:

Spicy Lime Popcorn

8 cups popped popcorn
2 Tbsp melted butter
1 tsp freshly grated lime zest
1 tsp ancho or your favorite chili powder (or 2 Tbsp finely chopped fresh cilantro)
1/2 tsp sugar
1/2 tsp salt
1/2 tsp freshly ground black pepper

Toss popcorn with melted butter. In a small bowl, mix lime zest, chili powder (or fresh cilantro), sugar, salt, and pepper. Sprinkle the seasoning mix over the popcorn and toss gently to distribute evenly.

Per Serving (1 cup): 58 cal, 3 g fat (2 g sat), 7 g carbs, 121 mg sodium, 1 g fiber, 1 g protein

Additional ideas:

Spear toothpicks into a few simple ingredients that go well together: a cherry tomato, basil leaf, and mini mozzarella ball ($6.80); an olive with a chunk of feta ($4.35); or a piece of melon and prosciutto ($3.20).
Cost: $14.35

Make Skagen shrimp cocktail: Serve boiled shrimp with Skagen dip (mix light mayo, sour cream, lemon zest, horseradish, and chopped dill; season with salt and pepper).
Cost: $7.70

Total cost for this simple elegance is $35.91.
